Recipes for Bento and Sakura Matcha muffin
Norimaki – Seaweed roll
Inarizushi (Inari sushi)
Tamagoyaki – Dashimaki tamago (Japanese omelete egg)
Karage (Japanese fried chicken)
Matcha red beans muffin topped with Sakura
Norimaki – Seaweed roll
Vinegared rice rolled in a sheet of dried seaweed with various fillings in the center.
Equipment
Bamboo sushi mat
Sharp knife
Cutting board
Ingredients
*Nori(seaweed)
*Sushi rice
*Sushi Vinegar
Japanese cucumber
Crab stick
egg
Lettuce
Sakura denbu
Kewpie mayonaise
The making of sushi rice
Use a large bowl, a tray, or the traditional Hangiri (wooden rice bowl).
Put the rice into your container and bring all of the rice to one side.
Add Sushi Vinegar to your rice.
2 Tbsps per 1 Cup of rice (measured before you cooked the rice or as your choice).
Mix the rice with the Vinegar several times, making sure that every grain of rice is covered.
This can be easily seen, as the rice breaks up from the clumps and shining.
Allow the rice to cool, until you can barely feel any heat coming off the rice (if you use the back of your hand, you will be able to feel the heat more accurately)
Occasionally flip the rice, don’t mix it, until the rice is no longer giving off heat.
On the bamboo matt, lay a layer of seaweed.
Spread the rice gentlely.
On top of the rice,
Put lettuce first, then line the cucumber, egg, crabstick, sakura denpu and spread Mayonaise at the side.
Gentlely lift up the bamboo matt and roll up and stop! (do not roll all at once)

Then gentle lift up the bamboo matt and roll it till the end.
Leave it aside for few minutes. (keep it cool)
Then cut it into half and then divide it to 3-4 pieces depend on your size of nori.
Norimaki can be roll with varities of choice.

Natto
Inarizushi (Inari sushi)
You can get this in Japanese supermaker.
It is also call abura-age.
It is make of tofu.
Fill up with the sushi rice and gentle fill up the side.
Do not over fill it or press the rice.
Tamagoyaki
Ingredients
3 L eggs
11/2 tablespoon of dashi (depend if your dashi is too strong please reduce)
30ml water or mirin
2 teaspoon of sugar
This is also what I wanted to share some of the tips when making tamagoyaki.
(A very helpful tips source from Onecookbook that some guest shared with me.)
Helpful Tips for Making Tamagoyaki
Everyone has different cooking skills and this dish might require you to practice a little bit until you shape them perfectly.
Here are a few helpful tips from me.
Do not worry about first few rolls. The inner rolls do not need to be neat at all, as you will keep rolling more layers on top. The first few rolls are the center of the tamagoyaki, so even if the layers are not perfectly lined up, do not worry!
Do not skip oiling the pan. I know you want to use less oil. Me too! However, make sure you coat the pan with oil very well. You don’t want your egg mixture to stick on the pan – even for non-stick pan.
Wait till the pan is completely heat up. Test the temperature of the pan with the small amount of the egg mixture. You need to see the egg sizzle to confirm the pan is hot enough.
Once done roll in the bamboo matt and tide it with a rubberband and let it cool.
Kara-age (Japanese fried chicken)
Ingredients A
Chicken (腿肉)- 300-400g
Grated ginger (tube of ginger or freshly grated) - 10g
Soyu (Soya sauce) 2 tablespoon
Sake – 1 tablesppon
Ingrediets B
Katakuriko (potato or corn starch) 2-3 tablespoon
Flour (any flour is ok) 2-3 tablespoon
Marinate chicken about 30 mins more time is better taste.
Heat up oil 160C (put a chopstick in if you see bubble up means is ready)
Matcha Muffin with red beans paste topped with sakura (oven bake)
This is my very special recipe I have created.
It is not sweet as other muffins so if you don't put red beans it wont be sweet.
Please add sugar if you need according your taste.
For 6 muffins pan
Ingredients A (Dry ingredients)
Flour 220gm
Baking Powder 10gm
Matcha Powder 10gm
Brown sugar 60gm
Ingredients B (Wet ingredients)
2 eggs L size
60ml salad oil, olive oil or canola oil
50ml milk
2 big tablespoon of plain yogurt
Red beans paste. (any red beans paste is ok if you can find)
Sakura flower perserved.
Icing powder/sugar (just mix a tablespoon of milk into the icing sugar get the texture thick)
The tips of having good texture of these easy muffins.
Please use room temperature egg and milk
you can warm the milk a little in the microwave
but the egg if best put out before use them.
1. Shiff the flour, baking powder and matcha
2. Add in sugar and whisk together.
Mix all ingredients B together.
Egg, Milk and Salad oil
Make a small hole like a well in the ingredient A after whisking.
Pour in the wet ingredient B
Mix gentle till combine then add in yogurt. Please do not over mix.
Use a muffin paper cup or any paper cup fill it up half with the matcha batter,
then put in the red beans paste and add in the another spoon of the matcha batter.
Bake in 180C for 30 mins
Please check your oven temperature if needed.
Matcha Muffin with red beans paste topped with sakura (steam version) Mushipan
This is my very special recipe I have created.
It is not sweet as other muffins so if you don't put red beans it wont be sweet.
Please add sugar if you need according your taste.
For 6 muffins pan
Ingredients A (Dry ingredients)
Flour100gm
Baking Powder 4gm
Matcha Powder 10gm
Sugar 40gm
Ingredients B (Wet ingredients)
1 egg L size
15ml salad oil, olive oil or canola oil
50ml milk
Make a small hole like a well in the ingredient A after whisking.
Pour in the wet ingredient B
Mix gentle. Please do not over mix.
Use a muffin paper cup or any paper cup fill it up half with the matcha batter,
then put in the red beans paste and add in the another spoon of the matcha batter.
